This Mexican Chicken with Cheese Sauce recipe is a mouthwatering combination of tender chicken breast smothered in a creamy, zesty cheese sauce. It's quick, easy, and perfect for busy weeknights.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup milk
  • 1/4 teaspoon paprika
  • 1 tablespoon chopped fresh cilantro (optional for garnish)

Instructions

  • Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a skillet over medium heat. Add the chicken and cook for 5-6 minutes per side or until fully cooked. Remove from skillet and set aside.
  • In the same skillet, reduce heat to low. Add cream cheese, milk, and paprika, stirring until smooth. Gradually mix in the shredded cheddar cheese until the sauce is creamy and melted.
  • Return the cooked chicken to the skillet, spooning the cheese sauce over the chicken. Let it simmer for 2-3 minutes.
  • Garnish with chopped cilantro, serve hot, and enjoy!

Notes

  • Serve with rice, tortillas, or steamed vegetables for a complete meal.
  • Use pepper jack cheese for extra spice.
